I started from the bottom, working every station in the kitchen — long nights, early mornings, burning my hands, learning, grinding, perfecting my craft, and building every recipe from the heart. Nothing was handed to me — I earned every step.

Where I come from, “Don” isn’t just a name.

It’s a title of respect — for someone who has put in the work and earned their place.

And “Chido” means cool, bold, unforgettable — a word full of culture, flavor, and swagger where I grew up.

Founded by Chef Abner Alva, Don Chido was born from years of dedication, experience, and a vision that started long before these doors opened. What began as a food truck evolved into a commitment — to elevate Latin flavors, honor heritage, and create a space Williamsburg can call its own.
